C’est Lionel, notre fishmonger français ici en Dornoch. He is très friendly. He drives here every Wednesday all the way from Aviemore where he runs his shop, parking next to the Cathedral, opposite to the Coop. He’s been in Scotland some fourteen years and in the seafood business for over forty years. The seafood he sells is never caught more than 48 hours ago and the quality is superb, all from Scottish waters. Hake, halibut, cod, salmon, mackerel, langoustines, moules… We buy something every week and every week he slips into our bag a lemon, often half a dozen organic free range eggs and sometimes an extra piece of fish, his own panko with parsley and garlic. The other day he slipped in a tub of prawn salad. He prepares everything himself. However, he doesn’t do kippers anymore.. His wife can’t stand the smell and sends him off to have yet another shower. Lionel's hint for cooking langoustines: While you're waiting for the water to boil, put the langoustines in hot water. They get sleepy and their meat will already be warm when you put them into the boiling water for 2 minutes and 15 seconds. Then they are at their best. There are two other fish vans that also drive here once a week. Before lockdown people bought their fish mostly from supermarkets. The lockdown has brought new customers to these small businesses. Apparently, they have been doing very well. The restaurants are opening today after the lockdown bringing even more business to our fishmongers as well.
